Vendanges de Savagnin is a journey for the senses into the peaks and valleys of France’s Jura region. A tasting experience that recognizes the expertise required when maturing in oak barrels previously used for Vin Jaune. This dry white wine, made with the Savagnin grape, is produced in the purest Jura tradition. When wine is matured in oak barrels, some of it evaporates – called the “angels’ share”. Usually, winegrowers refill barrels throughout aging so that there is no air inside. With Vin Jaune, however, this doesn’t happen. Barrels aren’t refilled. A thin layer of yeast forms on top of the wine, and the oxidation that occurs gives rich aromas of walnuts, hazelnuts, almonds, and toasted bread. These flavors enrich aromatic palate.
